Chocolate and coffee have played important roles in indigenous,
colonial, and post-colonial societies in Africa, Latin
America, Asia, and Europe, as well as in modern industrial
nations. You will explore the history of cacao cultivation; the
present day state of the global chocolate industry; and the
diverse cultural constructions surrounding chocolate. You
will discuss the implications for chocolate’s future of international
politics, alternative trade models, and the food movement.
You will also examine the historical roots of coffee
production and trade, including its roles in nation-building
and international power relations, and its current implications
for environmental change and economic development.
